Dubai foodies, brace yourselves as Chef Izu Ani is bringing a slice of Japan to DIFC! The genius behind GAIA, La Maison Ani, and the Time Out Market Dubai hits, is now diving headfirst into the world of omakase and kaiseki with his latest venture: KIGO. Opening this September at the Four Seasons Hotel DIFC, it’s all about seasonal ingredients, traditional precision, and a dining experience that feels part meal, and part performance.
A Nod to Japanese Traditions
The name KIGO comes from Japanese haiku, a nod to the seasons, perfectly reflecting the restaurant’s seasonal approach. Think of it as Japan’s traditions rooted in timing and nature, plated for your enjoyment. The setup? A cozy counter-style space where you can sit back, relax, and watch the chefs turn each dish into an edible spectacle.
The Dining Setup
KIGO seats just 44 guests, keeping things intimate. At the heart of it is a sushi counter made from rare Aji stone, sourced from a single mountain in Japan’s Kagawa prefecture, famous for its 40,000-year-old durability. You enter through a minimalist dry garden that already sets the zen mood before your first bite. It’s elegant, calm, and just the right kind of Instagram-worthy!
Meet the Masters
Leading the culinary charge is Chef Izu Ani himself, acting as the Chief Research Officer of Fundamental Hospitality. He’s joined by Head Chef Akinori “Aki” Tanigawa, a kaiseki veteran with 30+ years of experience, and Sushi Head Chef Daihachiro Ebata, fresh from five years at Michelin-starred Sushi Wakon in Kyoto. Basically, you’re in excellent hands.
A Seasonal and Artistic Journey
KIGO’s menu is a two-pronged delight, with an intimate sushi omakase and a seasonal kaiseki course. Each dish is crafted with peak-season ingredients chosen for flavor and cultural significance. The drinks here are no joke either, as you can expect rare Japanese rice grape wines and seasonal cocktails, each with its own little story. The space itself is accented with Rimpa-style artwork by Eiki Kimura, tying the whole experience together visually and atmospherically.
